The Tromboncino Squash, also known as Zucchetta Rampicante or the climbing squash, is a unique heirloom variety from the Northern Coast of Italy. Popular among Northern Italians and Europeans, it's mostly found in backyard gardens. This squash has a long, seedless neck and a bell-shaped head, setting it apart from other squash varieties.

Unlike most summer squash, which grow in a bush form, the Tromboncino has a vigorous climbing habit, similar to winter squash. It can grow up to three feet long. When harvested between four to 12 inches, it can be used like zucchini, while longer squash are best roasted. The young fruit is pale green, turning beige as it matures.

Flavor-wise, the Tromboncino is akin to zucchini but with a sweeter taste. While related to butternut squash, it is less nutty and has a lower moisture content. Its sweet, slightly nutty flavor, and firm texture make it a favorite among chefs, as it holds its shape well when cooked and adds color to dishes.
